Ulauncher v5 and older supports a tray icon if you install the optional dependency AyatanaAppindicator3 or AppIndicator3 ("gir1.2-ayatanaappindicator3-0.1" in Debian).
Ulauncher v6 (currently in beta) additionally supports XApp.StatusIcon, and will use it over the other alternatives that if you have XApp installed. With XApp you can right click the tray icon to show a menu of options, and left click to show Ulauncher. The other AppIndicator libraries doesn't support this, but does support "middle click" instead, if you have a device that can do that.
This setting also has to be enabled in the Ulauncher settings ("Advanced" section), "Show tray icon" or "Show Indicator Icon" depending on your Ulauncher version (it is enabled by default).
Additionally, your Desktop environment may need you to enable tray icons through some setting extension or dependency:
