Migrate gulpfile to ESM

Description

There are a few dependabot PRs for Gulp packages which are opened and seem to need to migrate our gulpfile.js file to ESM:

• Bump gulp from 4.0.2 to 5.0.0 in /{{cookiecutter.project_slug}} #4949
• Bump gulp-imagemin from 7.1.0 to 9.1.0 in /{{cookiecutter.project_slug}} #5052

Doesn't seem very difficult, but not exactly trivial either.

Gulp seems also to be breaking with node v22 #5039
