Update stale animated gifs for AI Assistant #3668

Description

The animated gifs for AI Assistant show outdated UI and need to be updated. There are also quite a few other screen captures that are out-of-date.

@colleenmcginnis Do you happen to know how these gifs were created? Did the dev team create the gifs or did the docs team?

It looks like @mdbirnstiehl added the gifs initially! I'm not sure if he got them from the dev team or created them himself.

I believe I created them myself. I know for sure I created the prompt gifs. I'm not seeing a record of the chat gifs in my snagit history, but I believe I created them as well.

@mdbirnstiehl Thanks for the clarification. I'm curious what build/environment you used when you created the gifs. One of the oblt clusters? I haven't done animated gifs in a long time, so I might reach out to you when I'm ready (unless it's super obvious in Snagit).

My apologies to Colleen for dragging her into the discussion. I really should have checked the commit history myself. :-)

At one point there was a QA deployment that had AI installed, and that's what I worked from. I tried finding the link, but I'm not seeing it now. They may have stopped using that since it was pretty early in development. I can definitely help with the gifs if you need help.

Moving this to Next Sprint because the screens are really out-of-date and still say tech preview.
