What
We've hardcoded a default password to make it easier to get started, which gets overwritten by the value they provide as ENV. This breaks the change password in the Helm Chart. Instead, we should use ALLOW_EMPTY_PASSWORD, which is an ENV value in Bitnami that I did not know existed.
