Unable to select alternative product template - missing Post Attributes selector

We have alternative template files for our products. e.g.

/*
Template Name: Structured PDP
Template Post Type: product
*/
...

In the classic editor, we can choose the template file for a product from the Post Attributes box (see screengrab).

There doesn't appear to be a way to choose the template with the New Product Editor.
