Description of Change

Continuation of #21908, aligning the names of the UITests projects in Compatibility with Controls.

Compatibility.TestCases.Shared.App
Compatibility.TestCases.Shared.Tests

I don't think we need to touch the legacy UITest projects. We can hopefully just delete them once we get over to appium.
