What's changed and what's your intention?

This PR removes the version property from all Docker Compose configuration files.

The version property is obsolete as per compose-spec documentation and causes a warning to be output when it is present in a docker-compose.yml file when running docker compose commands with Docker Compose version 2.26:

❯ docker compose pull
WARN[0000] /Users/patrick/Projects/risingwave/docker/docker-compose.yml: `version` is obsolete
